Am raspuns ca toata painea French Bakery este cu levain adica are acest ferment pe care ni l-am fabricat singuri (este un fel de maia) si care inlocuieste drojdia – Bernard ne-a invatat cum sa procedam 
painea este mai gustoasa, creste singura dar in 12-16 ore nu ca la drojdie intr-o ora, miezul are bule si painea are crusta – este opusul popularei franzele din ziua de azi care nu are nici o calitate din pacate….
